Potatoes are good because they're vegetables and high in vitamins and calories. They also have a lot of vitamin C, so they keep you from getting scurvy. Are you, in the year 2022, really in serious danger of getting scurvy? No probably not. But I think it's fun to think of getting important vitamins as "trying to avoid scurvy".
I believe this recipe is gluten free, I'm no expert.
It's not vegan because of the egg, but is vegetarian.
It can be made dairy free without the butter. The butter's just for taste.
This recipe is adapted from tumblr user Weaselle's perfect mashed potato recipe. Link here. They provide some extra steps I don't do that probably makes it taste better. Go give that post some love.
Mashed potatoes are incredibly easy to make homemade. The instant stuff is perfectly fine if you're constrained on cost, ingredients, or time. But if you have potatoes, or are able to get potatoes, it makes such an incredible difference. I was like you once, I know you think it doesn't, but it really does.
Try it once, at least, I swear to you that you will not want to go back. Or if you do, just ignore the mashed potatoes portion of this recipe and crack an egg on your instant mashed potatoes.

Boil water.
chop potato into small pieces while that boils. I don't peel em, it's a taste and texture preference thing. There are arguments online about it you can read.
Put into water with a bit of salt. Cook it with the pot uncovered. As it cooks, mash them. Wait until all the water is evaporated, and your mashed potatoes are the texture you like them.
While they're cooking, add desired spices. I like rosemary and thyme.
When it reaches desired consistency, take off heat, and turn off the stove.
Now make an egg. You can poach it or fry it or however else you like your eggs cooked. I like runny yolks with this, but you don't have to.
Put the mashed potatoes in a bowl. Put the egg on the mashed potatoes, salt and pepper on egg and mashed potatoes if theyre not flavorful enough for you. Put just so much goddamn butter on this. You could also totally put hot sauce on this.
If you're like me and trying to eat a lot of calories, this is a great way to get a lot of calories and protein quickly.
