Mashed potatoes and egg

Potatoes are good because they're vegetables and high in vitamins and calories. They also have a lot of vitamin C, so they keep you from getting scurvy. Are you, in the year 2022, really in serious danger of getting scurvy? No probably not. But I think it's fun to think of getting important vitamins as "trying to avoid scurvy".

I believe this recipe is gluten free, I'm no expert.

It's not vegan because of the egg, but is vegetarian.

It can be made dairy free without the butter. The butter's just for taste.

This recipe is adapted from tumblr user Weaselle's perfect mashed potato recipe. Link here. They provide some extra steps I don't do that probably makes it taste better. Go give that post some love.

Why homemade mashed potatoes?

Mashed potatoes are incredibly easy to make homemade. The instant stuff is perfectly fine if you're constrained on cost, ingredients, or time. But if you have potatoes, or are able to get potatoes, it makes such an incredible difference. I was like you once, I know you think it doesn't, but it really does.

Try it once, at least, I swear to you that you will not want to go back. Or if you do, just ignore the mashed potatoes portion of this recipe and crack an egg on your instant mashed potatoes.
