These are a bunch of simple breakfasts I like. I have to take my ADHD meds with food, so I'm required to eat something even if its small. These help wth that. All of these are also vegetarian if you don't add some sort of meat as a side.
An important note: I like breakfast food, but you are not legally required to eat traditional "breakfast food" for breakfast. First of all, American breakfast food is not universal. And second of all, no matter what constitutes breakfast food in your culture, no ones forcing you to do that. I love breakfast food and will eat it for lunch or dinner. Some people can't stand it! If you are a non-breakfast enjoyer I hope this tumblr post sets you free.
Now, the actual ideas:
There are a ton of ways to prepare an egg. I like eggs in the morning because they're filling, they're protein, and easy to make. Some folks hate eggs and that is fine, you don't have to do this.
Also, note: I only season my eggs after theyre cooked, while they're still hot. I don't put salt while theyre runny. I find if I do that I can't taste it. But I'm the outlier here, so make your own decisions.
Such as:
I like mine with runny yolks. There are many tutorials on this on Youtube. I like to just put some butter, maybe some olive oil, crack the egg, then cover my pan and leave it alone until the whites are all opaque. I don't like to flip. But that's just my method.
ONLY ATTEMPT IN A NON-STICK PAN. Or a cast iron with a good enough patina for it (which is what I prefer, though I've been taking lousy care of my cast-iron myself and need to build her patina back up.) Here's a 4 minute Internet Shaquille video where he explains how to make good scrambled eggs.
I like scrambled eggs with some cheese on it, maybe some veggies.
There are many tutorials and tips and tricks on how to make perfect poached eggs. Unfortunately, I cannot help you. I don't know how my poached eggs got good. I just kept failing at them until one day it worked. I don't add anything to my water, I don't set a timer, I just boil water and put an egg until it Looks Done.
A ton of people online say that fresh-farm eggs are the only way to get good poached eggs. The one time we actually had a friend's backyard eggs, it did not work to poach them, so I don't know what I did wrong there. Maybe they were already too non-fresh. Still, I promise you I've been poaching eggs fine with old, cheap, non-cruelty-free, come-in-styrofoam eggs.
I have no boiled egg advice. I don't really eat them. But do not worry, there are a million boiled egg fanatics with great advice out there.
Assorted bready things to eat with eggs:
If not bread, potatoes, or rice, or gluten-free bread if you have restrictions, just anything with carbs. Modify with veggies or cheese or meat.
I'm not vegetarian, but I don't eat a lot of meat. I don't at breakfast. Even so, if you like meaty things, some tips:
I don't actually like bacon that much for breakfast. It's a lot of steps, and a lot of clean up, and it doesn't work well with my ADHD in the morning.
I do like sausages, but also cooking real sausage to the point I'm confident I won't get food poisoning is also a lot for my ADHD brain to deal with. I prefer vegetarian meat substitute sausage when I can get my hands on it. It tastes like real sausage to me, it's less greasy and heavy so it hits my stomach less in the morning, and I can pop em on the pan or the air fryer and not worry and they come out great. No food poisoning concerns!
This is a public service announcement: Consider trying Spam if you never have. Yes I know it looks kinda gross or whatever. It's life changing. No food poisoning concerns, again, and less mess than bacon while still having the salty bacon-ish flavor. My friend got me hooked on Spam after forcing me to try Spam musubi and I love it to death now. If you're okay eating hot dogs then spam is no different, at at least spam is just pork and not... idk whatever hot dogs are. I'm a committed spam defender now.
I love shakshuka. Shakshuka is a dish commonly eaten in many countries in North Africa and the Middle East. It's basically eggs poached in tomato with spices (but doesn't have to be spicy). I haven't found my ideal and easy shakshuka recipe yet, but there are many online you can toy with. I recommend eating with tortillas, naan, or some kind of bread that isn't sandwich bread (sandwich bread toast gets soggy easy.) Bonus if you have feta. A lot of recipes have huge servings because they assume you're making it for a family breakfast, you can half or quarter the recipe.
